India is now seeing the rise of new age entrepreneurs. They are surprisingly young, ambitious and capable risk takers. These young guns are prepared to venture out into placid pastures of the unknown and try something different. Ajay Mallareddy, a simple boy next door from Gajuwaka, Vizag has redefined the gamut of fine dining.
The 32 year old thoughtful businessman looks at a bigger picture. With a mission to give his people nothing less than global, Ajay cut away from the monotonous IT sector to enter the space of multi cuisine business.
The time when Vizag had nothing but pizza joints and traditional meals, Ajay wanted to give them something new – eating world’s best food at competitive market prices. His Italian restaurant, Flying Spaghetti Monster at Waltaire is all about easy-on-pocket great spread for food lovers.
“I come from an IT background. After running a company into online solutions for over 6 years, I wanted to finally do what I long dreamt of” says Ajay, who is a messianic food lover. “I wanted to offer people of Vizag something they never were exposed to – first class Italian cuisine that looks and tastes amazing. Flying Spaghetti Monster is all about finest flavours melting in your mouth”
He started his venture in the heart of Vizag in 2011, solely banking on his inner instincts. The in house staff count in Waltaire is currently around 15, delivering customers day in and out. The newly opened branch in Hyderabad at Jubilee Hills houses around 40 employees.
The idea of starting Italian was not only difficult, but risky. “People had a vague idea about the concept of Italian cuisine. When we initially took off, they would come in assuming that there would other things available on the menu, such as Chinese and fast food. Eventually they started understanding the spread here” he says
Dining was a bold move, considering such a trend was still picking up in a place like Vizag. “People were aware of dining and eating out, but they were still not really exposed to experimenting. I saw the space and jumped in to cater to the market. The pricing is reasonable and affordable by all. My motto is simple; give the best food on plate and they will come back for more”
The reaction was surprisingly great, thanks to the transcendence of food “People started coming over to get lunch or dinner, and they were impressed with both taste and the presentation. The response was scintillating within a week of opening the restaurant’ Ajay quips with delight.
His Italian resto soon made its way from Waltaire to Hyderabad. A remarkable ambience was started in the plush area of Jubilee Hills in 2013. The journey was embarked upon with Ajay’s sole conviction. “I knew Hyderabad was a hub of fine dining. People here eat out very often and are open to exploring something new. I had to choose between all the main metros and Hyderabad was an instant choice”.
Ajay believed that his food will talk for his standards and not the marketing “There was minimal hype done to draw in my customers. The reputation from Vizag was soon catching up and folks started dropping in” smiles Ajay. He also opened a new section, Tabula Rasa, where people can host private parties. The ambiance is soft and classy, ideal for exemplary repartee.
Ajay’s vision of good food is for all. The place is always packed on both weekdays and weekends. Customers come from all kinds of background, vying to get a taste of delicious servings. “We have mixed patrons hailing from working class background to Page 3 Section. We love them come over and hang out with their friends and families over a palatable meal” A decent meal for one would ideally not cross INR 700 post taxes. This is the most inexpensive pricing strategy planned looking at average spending habits in a typical urban scenario.
His plans to expand FSM are on for other main metros. Ajay believes in steady moves rather than impulsive ones.
So what does this young enterprising genius hailing from modest roots think of his success?
“Honestly, I come from an illustrious family of professionals. Both my parents are lawyers. They are two amazing people who constantly gave me freedom to do what I wanted. They are instrumental in shaping my individuality. Being fiercely independent, I would always want my space. I can say that I’m the first generation businessman from my family”
Ajay loves reading voraciously and eating out. An avid food lover, he also likes to explore other eateries and traverse what is being served.
He shares some profound thoughts about his success running Flying Spaghetti Monster “Whatever you do, do a damn good job. Else don’t do it” signs off Ajay, sparking an efficacious inspiration to many.
