Eggless Mango Pudding
Ripe mangoes – 2 to 3 cups
Milk – 1 cup
Agar Agar or China grass – 5 gms soaked for 10 to 15 minutes
Cardamom powder – a pinch
Puree the ripe mango pieces along with 1/4th of milk in a blender. Set aside in a bowl.
Heat the agar agar along with water that it was soaked in on a low flame for 5 minutes. Stir till it dissolves completely in water
Take the rest of the milk and bring it to a boil. Add some sugar and cardamom powder
Add the agar agar mix to milk. Turn off the heat after stirring well. Let this cool or get to warm
Add the mango puree to the above mixture. Once the pudding settles to a room temperature, refrigerate
Serve the delicious eggless mango pudding along with extra mango pieces. Enjoy the delight on the faces of your loved ones.
