Summer is beating down already, and it’s time to make a list of all the favorite cooling drinks. Essentially, we would look at the drinks that are both soothing and nutritive, and spare us the wrath of the Diet Cokes. Nungu Nannari Sarbath, a delightful combination of toddy palms and Nannari (Sugandhi drink made with Sarsaparilla roots) perfectly meets the scorching need.

Toddy palm fruit will be readily available soon,, and that’s what makes this drink super possible. The toddy palm seeds are packed with vitamins and minerals. All the more reason why you should mix them with Nannari to arrive at the many benefits for summer.

Nungu Nannari Sarbath – Recipe


The preparation will be split into two parts – Nungu and the actual Nannari Sarbath


Toddy Palm Seeds – 4 to 5 peeled and chopped

Milk – 2 cups (boiled and chilled)

Rose Syrup – 2 Tsp You can also use Roohafza

Sugar – Adjustable

Nannari Sarbath

Toddy Palm seeds – 4 to 5 peeled and chopped

Nannari Syrup -4 tsp

Sugar or honey – Adjustable

Water – 2 Cups



Take a vessel, bring milk to the boil. Allow the milk to simmer as it gradually reduces to three fourth of its original volume

Add sugar to the milk and continue to simmer for few more minutes.

Turn off flame and bring the milk to room temperature

Add the rose syrup and crushed nungu/toddy/thaati munjalu and mix.

Chill this the refrigerator for a few hours and the serve.

Nannari Sarbath

Add 2 tsps of nannari syrup in a serving glass. Add a cup of chilled water and crushed toddy palm seeds. Mix them well with a spoon. Add ice cubes and serve.

For best results, use homemade Nannari syrup
