Andhra Style Mutton Pepper Fry – A Quick Recipe

If you love mutton, there is no way you can miss this absolutely delicious Andhra style mutton pepper fry. Lot of flavors and spice, this age old home made preparation is loaded with nutrients for health.

Here is a  quick recipe to get started.

Andhra Style Mutton Pepper Fry

* 1 kg Mutton cubed into medium size pieces
* 2 medium sized onions, thinly sliced into cubes
* 5 green chillies thinly sliced
* Bunch of cilantro (coriander leaves)
* 2 Table spoons ginger – garlic paste
* 2 table spoons red chilli powder (adjust according to your taste)
* Salt to taste
* 1 tea spoon turmeric powder
* 1 tablespoon black pepper powder
* 1/2 cup oil

Masala 1:

All dry roasted and made into paste
4 cloves
1 stick cinnamon
1 teaspoon shajeera
2 tablespoon coriander
1 tablespoon cumin
1 bay leaf
1 cardamom pod

Masala 2: All dry roasted and made into paste
1 tablespoon poppy seeds
1 tablespoon coriander seeds

1) Wash and clean mutton
2) add half of onions, green chillies, ginger garlic paste, turmeric, salt and red chilli powder and marinate for 1 hr
3) Add some oil to the meat – mix well
4) Cook in a pressure cooker for up to 3 whistles to make the meat tender
5) In a fresh pan add oil and keep on the stove
6) Add cilatro leaves, remaining onions and green chillies
7) Saute them till the onions are translucent
8) Add the remaining ginger garlic paste, fry till the rawness is gone
9) Add remaining red chilli powder and turmeric
10) Add the cooked meat along with water that comes out after pressure cooking it
11) Add the Masala 1 – mix well and cook thoroughly
12) Add the Masala 2 mix well.
13) Cook till all water evaporates
14) Fry till the meat sears evenly on all sides
15) Sprinkle some black pepper powder and salt

Garnish with the remaining cilantro and enjoy!!
