Mirapakaya Bajji from Andhra is a great snack that has massive fan following among the food lovers. The tang mixed with the hitting spice from green chilli creates a heavenly taste, particularly in the season of rains.
Here is a quick recipe for those who have to enjoy a plate of Mirapakaya Bajji in heavy rains.
Andhra Mirapakaya Bajji
To Prepare the Batter:
10 to 12 Special green chillies (large)
1 Cup Besan (Gram flour)
2 Tsp Rice Powder
A pinch of baking soda
1/2 Tsp Ajwain
1 Tsp Salt
3 Tsp groundnuts
2 Tsp sesame seeds
Roast groundnuts and sesame seeds.Remove the skins from the groundnuts. Add salt and soaked tamarind to the nuts and sesame seeds. Grind into fine paste.
Wash the green chillies, drain them and slit in longitudinal length. Remove the seeds inside as they can make the chillies extremely hot. Fill the gap of each chilli with the stuffing. Set aside.
Make a smooth thick batter of gram flour. Add salt, ajwain, baking soda to the batter.
Heat oil in a pan. Dip the stuffed chillies in the prepared batter and deep fry until golden brown.
Remove the bajjis and place them on paper napkins to drain out excess oil.
Serve hot with tomato sauce or green chutney.
