Andhra Chepala Iguru or Fish Curry
Fish Pieces – 3 to 4
Oil – 3 Tsp
Onion – 2 Medium
Ginger Garlic Paste – Packaged or freshly made 1/2 Tsp
Coriander powder – 1/2 Tsp
Cumin powder – 1/2 Tsp
Red Chilli Powder – 11/2 to 2 tsp. Depends on your spice levels
Green Chillies – 2 to 3
Salt – to taste
Garam Masala – 1 Tsp
Fry the sliced onions in oil till they turn golden brown in color. Add ginger garlic paste. Add green chillies with onion. Adjust or reduce the red chilli powder to balance the spice.
Once the mixture looks fried, add cumin powder, coriander powder, salt, red chilli powder and some water. Keep stirring the mixture properly as it cooks. After sometime, drop the fish pieces in the mix.
Make sure you use the right sized pan for the curry. This is because the fish pieces need to be spaciously placed one beside the other without overlapping. Fish tends to be very delicate so try not to mix the curry with spatula. Mix in a circular motion by holding the handles.
Close the lid and let the curry cook thoroughly. Allow the water to evaporate. Add Garam Masala.
Finally, garnish this delightful Chepala Iguru with coriander leaves.
